This green chile chicken tortellini soup is the bowl that hits differently from anything else in the weeknight rotation. You start by searing the chicken breast for a few minutes to get some color and flavor on it, then you soften the onion and chiles in the same pot while you broil three more green chiles until they are charred and blistered and smoky. Those roasted chiles go into the pot, the broth goes in, the chicken cooks through and gets shredded, cream cheese melts into the broth until it is rich and creamy, and then salsa verde, corn, lime, and tortellini finish the whole thing off. Every bowl has a bold, smoky, slightly spicy depth that makes this one of those soups people ask for the recipe on immediately.

Why You’ll Love This Tortellini Soup

  • One pot handles everything from the sear to the finished soup. The broiled chiles are on a separate sheet pan but come right back into the same pot so cleanup is still minimal.
  • The cream cheese stirred into the hot broth produces a rich, slightly tangy creaminess that pairs specifically well with the green chile and salsa verde flavors and makes the broth taste deeply developed.
  • Salsa verde is doing a significant amount of flavor work in the background. It adds a bright, herby, slightly tart depth that makes this taste like a properly built Southwestern soup rather than just chicken broth with some chiles stirred in.
  • This is a genuinely satisfying, bold, flavorful soup that works for a weeknight dinner and feels special enough for a gathering.

What You Need To Make Green Chile Chicken Tortellini Soup

The Soup Base

Chicken breast seared first for color and flavor then cooked through in the broth and shredded is the main protein. Yellow onion, garlic, and diced green chiles build the aromatic base. Three additional green chiles get roasted under the broiler until charred and blistered adding a smoky depth that runs through the entire soup. Chicken bone broth is the liquid foundation. Bone broth specifically adds extra richness and protein over regular chicken broth. Cream cheese stirred into the hot broth produces a creamy, slightly tangy base. Salsa verde adds a bright, herby Southwestern depth. Corn adds natural sweetness and texture throughout.

The Seasoning

Chili powder and cumin are the primary spice drivers that build the warm, savory backbone. Garlic powder and onion powder add depth throughout the broth. Salt and pepper season everything evenly. Fresh lime juice squeezed in at the end brightens the whole bowl and cuts through the richness of the cream cheese.

The Tortellini

A package of refrigerated cheese tortellini added last cooks directly in the seasoned broth and absorbs all that green chile and salsa verde flavor as it goes.

The Toppings

Sour cream, sliced avocado, and fresh jalapeño slices make every bowl feel complete and customizable.

Can I use flour tortellini instead of cheese tortellini?

Any refrigerated tortellini works. Cheese tortellini is recommended because the creamy cheese filling pairs naturally with the cream cheese and salsa verde broth. Spinach and cheese tortellini adds a slightly earthy green element. Chicken tortellini doubles down on the protein. Mushroom tortellini adds an earthy depth. Adjust cook time according to the package directions since different tortellini varieties may vary slightly.

How to Make Green Chile Chicken Tortellini Soup

Step 1: Sear the Chicken

Heat the pot over medium-high heat. Add the oil and sear the chicken breasts for 3 to 4 minutes per side until golden. Remove and set aside.

Step 2: Cook the Aromatics

Add the onion, garlic, and 2 diced green chiles to the same pot with a drizzle of oil if needed. Cook stirring often until softened and translucent.

Step 3: Roast the Chiles

Turn the oven to broil. Place the remaining 3 green chiles on a sheet pan, spray with oil, and broil until charred and blistered on each side. Let cool, peel off the skin, chop, and add to the pot.

Step 4: Cook the Chicken Through

Pour the bone broth into the pot and return the seared chicken. Cover and boil for 10 to 12 minutes until fully cooked. Remove and shred the chicken.

Step 5: Make It Creamy

Stir the softened cream cheese into the hot broth until completely melted and smooth.

Step 6: Add Everything Else

Add the salsa verde, corn, lime juice, all seasonings, shredded chicken, and tortellini. Bring to a boil and cook until the tortellini are cooked through. Serve immediately.

How do I peel roasted green chiles?

After broiling until charred and blistered on both sides place the chiles in a covered bowl or a sealed zip-top bag for 5 minutes. The steam trapped inside loosens the skin significantly. Once slightly cooled use your fingers or a paper towel to rub and peel the blistered skin away, it should come off easily in large pieces. Do not rinse under water as this washes away the smoky flavor you just developed.

Storing and Reheating

Store the soup and tortellini separately if possible for the best result. The tortellini continues absorbing broth as it sits and becomes very soft overnight. If stored together add a generous splash of bone broth when reheating to loosen the soup back to the right consistency. Reheat over medium-low heat on the stovetop or microwave on medium power in 60-second intervals. The soup base without tortellini keeps for up to 4 days in the refrigerator and freezes well for up to 3 months.

How to Serve Green Chile Chicken Tortellini Soup

Serve immediately in deep bowls while the tortellini is still at its best texture. A generous dollop of sour cream, sliced avocado, and fresh jalapeño slices on top make every bowl look finished and restaurant-worthy. Extra lime wedges on the side for squeezing over are always a good addition.

Variations and Subsitutions

  • Use rotisserie chicken: skip the sear and shred step entirely and add pre-shredded rotisserie chicken with the tortellini. Saves about 20 minutes total.
  • Use canned green chiles: substitute 2 cans (4 oz each) of diced green chiles for all 5 fresh chiles for a faster, still-delicious version without the broiling step.
  • Swap the cream cheese: use 1/3 cup heavy cream stirred in at the same stage for a slightly lighter, still-creamy result.
  • Make it spicier: add a diced jalapeño with the onion or a pinch of cayenne with the other seasonings.
  • Make it milder: use mild green chiles and mild salsa verde and skip the jalapeño garnish.
  • Add more vegetables: diced zucchini or a handful of spinach stirred in with the tortellini both work well without changing the cook time significantly.

Ingredients

  • 1 tbsp neutral oil
  • 1 lb boneless skinless chicken breast
  • 1 medium yellow onion diced
  • 2 garlic cloves chopped
  • 2 green chiles diced
  • 3 green chiles for roasting
  • 4 cups chicken bone broth
  • 4 oz cream cheese softened
  • 1/2 cup salsa verde
  • 1 can corn 15 oz, drained
  • Juice of 1 lime
  • 1 tbsp chili powder
  • 1/2 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 package 10 oz tortellini

For Serving

  • Sour cream
  • Avocado
  • Jalapeño slices

Instructions

  • Heat a large pot over medium-high heat. Add the oil and sear the chicken breasts for 3 to 4 minutes per side until golden. Remove and set aside.
  • Add a drizzle of oil if needed. Add the diced onion, garlic, and 2 diced green chiles. Cook stirring often until softened and translucent.
  • Turn the oven to broil. Place the 3 remaining green chiles on a sheet pan, spray with oil, and broil until charred and blistered on one side. Flip and repeat. Remove from the oven, let cool, peel off the blistered skin, chop, and add to the pot.
  • Pour in the bone broth and return the seared chicken to the pot. Cover and boil for 10 to 12 minutes until the chicken is fully cooked. Remove the chicken and shred.
  • While the chicken is out of the pot stir the softened cream cheese into the soup until fully melted and incorporated.
  • Add the salsa verde, corn, lime juice, all seasonings, shredded chicken, and tortellini. Bring to a boil and cook until the tortellini are fully cooked through.
  • Serve immediately topped with sour cream, avocado, and jalapeño slices.

Notes

  • The roasted chiles are the step that takes this soup from good to something specifically great. The charred, slightly smoky flavor they add is completely different from raw or canned chiles and worth the extra 10 minutes under the broiler.
  • Make sure the cream cheese is fully softened before stirring it in. Cold cream cheese will not melt smoothly into the hot broth and leaves lumps that are difficult to break up after the fact.
  • Add the tortellini last and serve immediately. Tortellini continues absorbing broth as it sits and can become overly soft and bloated if left in the soup too long. Eat it while it is at its best.
  • The soup base can be made ahead through step 5 and refrigerated. Add fresh tortellini when reheating so it cooks directly in the hot soup right before serving.
