  • Cayenne pepper – optional, but adds a subtle kick of heat
  • Olive oil – for browning the chicken and building flavor
  • Yellow onion – adds sweetness and balance to the sauce
  • Fresh garlic – essential for rich, cozy flavor
  • Tomato paste – deepens the sauce and adds richness
  • Sun-dried tomatoes in oilsun-dried tomatoes bring all the flavor to this dish. I prefer a brand that uses 100% olive oil
  • Sun-dried tomato oil – use a little from the jar for extra flavor
  • Orzo pasta – cooks right in the sauce and makes this dish extra comforting
  • Chicken bone brothbone broth adds a protein boost, but feel free to use regular broth if that’s what you have on hand
  • Lite coconut milk or heavy cream – I prefer coconut milk (from a can) as it creates a creamy sauce without feeling too heavy and will reduce the amount of dairy in the dish, however, heavy cream will do the trick
  • Fresh spinach – wilts right in and adds a pop of greens
  • Grated Parmesan – finishes the dish with salty, cheesy goodness. I highly recommend using a block of parmesan and grating yourself
  • Fresh basil – optional, but perfect for serving and fresh flavor

What is Orzo?

Orzo is a small, rice-shaped pasta that’s incredibly versatile and cooks up tender and creamy. Even though it looks like rice, it’s actually pasta, traditionally used in Mediterranean and Italian-inspired dishes. Orzo absorbs flavor beautifully, making it perfect for one-pan meals, soups, and creamy skillet dinners. It’s comforting, easy to cook, and gives you that risotto-like feel without all the stirring — basically a cozy, saucy hug in pasta form.

Why use orzo instead of rice?

Orzo cooks faster, soaks up flavor better, and creates a naturally creamy, cozy texture without extra effort. It gives you risotto vibes with way less work — perfect for one-pan, ultra-comforting meals.

step-by-step instructions

  1. Toss chicken breast pieces in the seasoning made with Italian seasoning, garlic powder, onion powder, salt, pepper and cayenne.
  2. Heat a large skillet over medium-high heat. Add oil, then add the seasoned chicken.
  3. Cook the chicken until browned, about 3 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add onion, garlic, tomato paste, sundried tomatoes, and sundried tomato oil. Cook, stirring often, until the onions are softened.
  5. Stir in the orzo, chicken broth, coconut milk, and the cooked chicken. Cover and let simmer for 20–25 minutes, stirring occasionally, until the orzo is tender.
  6. Add spinach and grated Parmesan, stirring until the spinach is wilted and fully incorporated. Cover briefly if needed to help steam the spinach.
  7. Serve warm, topped with fresh basil and extra Parmesan.

• Brown the chicken well before removing it from the pan — the brown bits left in the pan will add tons fo flavor.
• Stir the orzo occasionally while it simmers to prevent sticking and ensure even cooking.
• Use bone broth instead of regular chicken broth for extra protein and deeper flavor.
• Prefer extra creaminess? Swap coconut milk for heavy cream or half-and-half.
• Add a pinch of red pepper flakes or extra cayenne if you like a little heat.

Ingredients
  

  • 1 tablespoon oil
  • lb chicken breast cut into bite-sized pieces
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt & pepper
  • ½ teaspoon cayenne pepper optional, for heat
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 tablespoon tomato paste
  • ¾ cup sun-dried tomatoes in oil drained
  • 1 tablespoon sun-dried tomato oil from the jar
  • 1 cup orzo pasta
  • 1 cup chicken broth bone broth for extra protein
  • 1 15 oz can lite coconut milk (or heavy cream)
  • Large handful of fresh spinach
  • ½ cup grated Parmesan cheese
  • Fresh basil for serving

Instructions
 

  • Add the chicken pieces to a bowl and season with Italian seasoning, garlic powder, onion powder, salt, pepper, and cayenne (if using). Toss well to evenly coat the chicken.
  • Heat a large skillet over medium-high heat and add the oil. Once hot, add the seasoned chicken and cook for about 3 minutes per side, or until browned and mostly cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced onion, minced garlic, tomato paste, sun-dried tomatoes, and sun-dried tomato oil. Cook for a few minutes, stirring often, until the onions are softened and the tomato paste has deepened in color and aroma.
  • Add the orzo, chicken broth, coconut milk, and the cooked chicken back into the skillet. Stir to combine, then cover and reduce heat to a gentle simmer. Cook for 20–25 minutes, stirring occasionally, until the orzo is tender and the sauce has thickened.
  • Stir in the spinach and grated Parmesan, allowing the spinach to wilt into the sauce. Cover briefly if needed to help steam the greens.
  • Finish with fresh basil and extra Parmesan, then serve warm.
