Postpartum Meal Prep: Easy Meals for New Moms

Whether you're preparing your own freezer before baby arrives or bringing dinner to a friend, these postpartum meal prep recipes are comforting, family-friendly, and made to reheat beautifully. They're simple meals that help take one thing off a new parent's plate during those busy first weeks.

I truly believe one of the best gifts you can give a new mom is a home-cooked meal. Those first few weeks are filled with so much joy, but they’re also exhausting, and having a nourishing dinner ready to go can make all the difference. Whether you’re putting together a few postpartum meal prep meals, preparing your own freezer before baby arrives, or helping with a meal train, these are some of my favorite recipes that reheat beautifully, feed a family, and offer a little comfort during one of life’s biggest transitions.

This Southwest Quinoa Bake is an easy, protein & fiber-packed dinner made with ground beef, quinoa, black beans, corn, and plenty of taco flavor. It’s a wholesome one-pan meal that’s perfect for those busy days and makes incredible leftovers.

My friends only request for the meal was that it be high in protein! I wanted to be sure I was making something that would also nourish her body, so for the main dish of this postpartum meal prep I knew this easy & delicious southwest quinoa bake would be perfect!

Southwest Quinoa Bake

  • Ingredients:
  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can crushed tomatoes or 1 cup of your favorite salsa
  • 1 cup uncooked quinoa, rinsed
  • 1 packet taco seasoning
  • 2 cups bone broth (or beef broth)
  • 1 cup shredded cheddar or Mexican blend cheese

For Garnish (Optional)

  • Diced avocado
  • Fresh cilantro
  • Diced tomatoes
  • Sliced jalapeños
  • Sour cream
  • Lime wedges

Directions (stovetop):

  1. Heat a large skillet over medium-high heat. Add the ground beef, cooking until the beef is browned. Drain any excess grease if needed.
  2. Stir in the onion, garlic, bell pepper, corn, black beans, crushed tomatoes, taco seasoning, quinoa, and bone broth. Mix well to combine.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25–30 minutes, or until the quinoa is tender and most of the liquid has been absorbed.
  4. Sprinkle the shredded cheese evenly over the top, cover, and let sit for 5 minutes, or until the cheese is melted.
  5. Finish with your favorite toppings and serve warm.

Directions (oven-baked):

  1. Preheat the oven to 375°F.
  2. Heat a large skillet over medium-high heat. Add the ground beef, cooking until the beef is browned. Drain any excess grease if needed.
  3. To a 9×13-inch baking dish (or disposable aluminum pan) add the quinoa, broth, onion, garlic, bell pepper, corn, black beans, crushed tomatoes (or salsa), taco seasoning, and cooked ground beef. Stir until everything is evenly combined.
  4. Cover tightly with foil and bake for 35–40 minutes, or until the quinoa is tender and most of the liquid has been absorbed.
  5. Remove the foil and stir the mixture well. Sprinkle the shredded cheese evenly over the top and return to the oven for 5 minutes, or until the cheese is melted.
  6. Garnish with your favorite toppings and serve warm.

Tip: If the quinoa isn’t quite tender after 35–40 minutes, add a splash of broth, cover again, and continue baking for another 5–10 minutes. Oven bake times can vary slightly depending on the baking dish and your oven.

Packed with wholesome ingredients, they’re an easy postpartum meal prep recipe that’s great for late-night feeds, busy mornings, or whenever you need a little extra energy. tips & tricks for banana cookies

  • Use whey protein. I tested these cookies with whey protein powder, not plant-based protein. Plant-based protein powders absorb liquid differently and may result in a drier, denser cookie.
  • Peanut butter works great. The original recipe calls for tahini, but I used natural peanut butter and loved the flavor. Almond butter or cashew butter would also be delicious substitutions.
  • Use ripe bananas. The riper your bananas, the sweeter and more flavorful the cookies will be. Spotty bananas are ideal.
  • Don’t overbake. These cookies will continue to set as they cool, so pull them from the oven when they’re just lightly golden around the edges to keep them soft and chewy.
  • Freeze for later. These cookies freeze beautifully, making them a perfect addition to your postpartum meal prep. Simply thaw at room temperature or warm one in the microwave for a few seconds when you’re ready to enjoy.

These Greek Yogurt Protein Bagels are soft, chewy, and packed with protein using just a handful of simple ingredients. They’re perfect for postpartum meal prep and make an easy grab-and-go breakfast all week long.

Protein Bagels

Ingredients

  • 1 cup Bob’s Red Mill Gluten Free 1:1 Baking Flour (or all-purpose flour)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup plain Greek yogurt
  • 1 large egg, beaten (for egg wash)
  • Everything bagel seasoning, sesame seeds, or your favorite topping

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Add the Greek yogurt and stir until a shaggy dough forms. Use your hands to gently bring the dough together if needed.
  3. Lightly flour your work surface and knead the dough just until smooth. Divide into 4 equal pieces.
  4. Roll each piece into an 8-inch rope, then form it into a circle and firmly pinch the ends together to seal.
  5. Place the bagels on the prepared baking sheet. Brush the tops with the beaten egg and generously sprinkle with everything bagel seasoning or your topping of choice.
  6. Bake for 25–30 minutes, or until the bagels are golden brown and firm to the touch.
  7. Let cool for 10 minutes, then slice and toast before serving.

Tip: If the dough feels sticky, lightly flour your hands and work surface. Avoid adding too much flour, as this can make the bagels dense.

For meal prep: Once cooled, slice the bagels in half before freezing. They can go straight from the freezer to the toaster, making breakfast quick and easy all week long.
