Ingredients

marinated cherry tomatoes

  • 1 pint cherry tomatoes
  • ¼ cup olive oil
  • 1 lemon juiced
  • 1 shallot thinly sliced
  • 2 garlic cloves minced
  • 1 tsp fresh basil, oregano, and thyme
  • 1/2 tsp salt & pepper

for the platter

  • 1-3 heirloom tomatoes sliced 1/4” thick
  • 8 oz burrata
  • 1-2 peaches sliced
  • 1 cup fresh basil leaves for garnish
  • hot honey for drizzling
  • sea salt
  • Toasted bread or crostini for serving

Instructions

  • In a large container, whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper. Add cherry tomatoes and toss to coat. Let sit for 30 minutes.
  • Arrange marinated tomatoes and heirloom tomato slices on a serving platter, leaving space in the center for the burrata. Spoon extra marinade over the tomatoes.
  • Nestle peach slices throughout the platter to fill in gaps. Place the burrata in the center.
  • Garnish with fresh basil leaves, drizzle with hot honey, and serve with toasted bread or crostini.

Notes

  • For a smaller platter, use 1 heirloom tomato + 1 peach.
  • For a larger platter, use 3 heirloom tomatoes + 2 peaches.
  • Swap peaches with nectarines if desired.
  • Balsamic glaze can be used in place of hot honey for a different flavor.
