Ingredients
  

  • 2 russet potatoes peeled and cubed
  • ¼ cup olive oil
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon chili flakes more for spicier
  • 1 bell pepper diced
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 lb ground beef
  • 2 tablespoons tomato paste
  • ½ cup beef broth
  • 1-1.5 cup shredded cheddar cheese
  • Cilantro for garnish
  • Sliced tomatoes for garnish
  • Sliced red onion for garnish

Instructions
 

  • Preheat the oven to 425°F. In a small bowl, mix together the seasonings and set aside.
  • Add the cubed potatoes to a bowl, drizzle with oil, and season with half of the seasoning mix. Toss until well coated and set aside.
  • Heat a skillet over medium-high heat and drizzle with oil. Add the peppers, onion, and garlic and cook until softened. Add the ground beef and cook until browned, breaking it into small pieces.
  • Stir in the tomato paste, remaining seasoning, and broth. Mix well, then sprinkle in the cheese and stir until combined. Adjust seasoning as needed.
  • Transfer the beef mixture to a baking dish and top with the seasoned potatoes. Cover with foil and bake for 20 minutes. Remove the foil and bake an additional 25 minutes, or until the potatoes are tender and lightly crispy. Sprinkle cheese over the top and allow it to melt.
  • Garnish with cilantro, tomatoes, and onions before serving.
