Cilantro Lime Chicken Skewers

These Cilantro Lime Chicken Kebabs are juicy, flavorful, and made using one of my favorite kitchen hacks—starting with frozen chicken! Marinated in a bright cilantro lime sauce and grilled until lightly charred, they're an easy weeknight dinner perfect for serving over rice or your favorite summer sides.

Equipment

Ingredients
  

  • 1 pound frozen chicken breasts
  • cup olive oil
  • 2 garlic cloves minced
  • Juice of 1–2 limes about 2 tablespoons
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes

For Serving

  • Lime wedges
  • Cilantro lime rice

Instructions
 

  • Preheat your grill to 400–450°F. (You can also use a grill pan or cast iron skillet on the stovetop.)
  • While the chicken is still frozen, use a sharp knife to carefully slice it into thin strips.
  • In a bowl, whisk together the olive oil, garlic, lime juice, apple cider vinegar, honey, cilantro, salt, pepper, and red pepper flakes. Reserve ¼ cup of the marinade for serving.
  • Toss the sliced chicken with the remaining marinade and let it sit for 15–30 minutes. If serving with rice, prepare it while the chicken marinates.
  • Thread the chicken tightly onto skewers. Grill for 4–5 minutes per side, or until lightly charred and the internal temperature reaches 165°F.
  • Brush the cooked chicken with the reserved marinade, then serve over cilantro lime rice with a squeeze of fresh lime.

Notes

In step 2, if the chicken is too frozen to slice, make the marinade first and let the chicken sit at room temperature for 5–10 minutes. It will soften just enough to make slicing much easier while still remaining frozen.
