- 2 cups frozen corn thawed
- 1 15-ounce can creamed corn
- ½ cup 1 stick melted butter
- ⅓ cup honey
- ¾ cup cornmeal
- 1 cup milk
- 3 eggs
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup shredded cheddar cheese
Preheat oven to 350°F and grease a baking dish.
In a large bowl, whisk together the wet ingredients. Add the dry ingredients and mix until just combined.
Pour the batter into the prepared dish, sprinkle the cheddar evenly over the top, and bake for 40–45 minutes, until the top is golden and the center is set.
Garnish with fresh herbs, if desired, and serve warm.
