- Marinated Cherry Tomatoes– these are optional, but I love the flavor they add, plus having the various sizes of tomatoes look visually appealing
- Heirloom tomatoes– I love to buy a variety of colors
- Burrata– for larger platters I use 2 (4oz) burrata balls
- Peaches– look for peaches that are perfectly ripe- not too firm, but not too soft
- Fresh basil
- Hot honey– regular honey will work just fine!
- Sea salt
- Toasted bread or crostini– grab a baguette, slice, drizzle with olive oil and bake until crispy

step-by-step
- Heirloom Tomatoes: Slice the tomatoes, roughly 1/4″ thick, and arrange on a large platter. I arrange mine around the edges & corners, slightly overlapping but also allowing the various colors to be shown. Just be sure to leave space in the center for the burrata.
- Marinated Cherry Tomatoes: Find little pockets around the heirloom tomatoes to add these. Again, overlap where needed without fully covering the heirloom tomatoes.
- Sliced Peaches: Slice a fresh peach into roughly 12 pieces. These make great space fillers so look for any white space and layer the peaches.
- Basil: Add full leaves of basil in any open spaces.
- Burrata: For a larger platter, use 2- 4 ounces balls of burrata. I like to pull mine apart before placing them in the center of the platter.
- Finishing Touches: Drizzle with hot honey (or regular), a little olive oil and chopped pieces of basil.
- Serve with crostinis, toasted bread or crackers

Burrata with Marinated Tomatoes & Peaches
Ingredients
marinated cherry tomatoes
- 1 pint cherry tomatoes
- ¼ cup olive oil
- 1 lemon juiced
- 1 shallot thinly sliced
- 2 garlic cloves minced
- 1 tsp fresh basil, oregano, and thyme
- 1/2 tsp salt & pepper
for the platter
- 1-3 heirloom tomatoes sliced 1/4” thick
- 8 oz burrata
- 1-2 peaches sliced
- 1 cup fresh basil leaves for garnish
- hot honey for drizzling
- sea salt
- Toasted bread or crostini for serving
Instructions
- In a large container, whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper. Add cherry tomatoes and toss to coat. Let sit for 30 minutes.
- Arrange marinated tomatoes and heirloom tomato slices on a serving platter, leaving space in the center for the burrata. Spoon extra marinade over the tomatoes.
- Nestle peach slices throughout the platter to fill in gaps. Place the burrata in the center.
- Garnish with fresh basil leaves, drizzle with hot honey, and serve with toasted bread or crostini.
Notes
- For a smaller platter, use 1 heirloom tomato + 1 peach.
- For a larger platter, use 3 heirloom tomatoes + 2 peaches.
- Swap peaches with nectarines if desired.
- Balsamic glaze can be used in place of hot honey for a different flavor.
