Something about a creamy, saucy pasta dish makes everything feel right in the world. Then add bacon, a little spice and loads of parmesan and you’re golden! This is the kind of pasta I’d make to impress guests (as long as they can handle a little heat) or just as easily whip up on a simple Thursday night.

  • Spaghetti– or any pasta that the sauce can cling to
  • Bacon 
  • Sweet onion like a vidalia or yellow onion
  • Tomato Paste– skip the can and grab a tube of tomato paste. This is less wasteful, and you can store in your fridge!
  • Garlic clove– instead of chopping, just grab a grater—your garlic will be ready in seconds with way less effort.
  • Cream
  • Calabrese Peppers– look for a jar of peppers like this. It’s okay if they are chopped or whole, in water or oil
  • Salt & Pepper
  • Parmesan Cheese– I prefer grating my own Parmigiano Reggiano. However, for convenience, you can purchased already grated parmesan in the deli section of your grocery store.
  • Parsley

step-by-step:

  1. Boil the pasta. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1–1½ cups pasta water; drain.
  2. Heat a large skillet over medium heat. Add bacon and onion and cook for 2–3 minutes until onion is softened & bacon is slightly crispy. Add in minced garlic cloves & tomato paste; cook 30 seconds until fragrant.
  3. Reduce the heat pour in the cream and 1 cup reserved pasta water. Stir in Calabrian chile paste (or chopped Calabrian chiles in oil) and parmesan cheese. Cook 1–2 minutes, stirring, until slightly thickened.
  4. Add drained pasta to the skillet and toss over medium heat 1–2 minutes, adding more pasta water as needed until the sauce clings and looks glossy.
  5. Serve with more Parmesan and chopped basil or parsley. Drizzle a little chile oil from the jar over each bowl if desired.

Creamy Calabrese Chile Pasta features tender noodles tossed in a rich, spicy sauce with smoky bacon, sautéed onions, and a touch of Parmesan. This quick and flavorful comfort dish is perfect for any night of the week.

Ingredients
  

  • 8 oz spaghetti uncooked
  • ½ cup bacon diced
  • ½ cup sweet onion finely diced
  • 2 tablespoons tomato paste
  • 2 garlic cloves minced
  • 1 cup cream
  • ¼ cup calabrese peppers in oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup parmesan cheese more for garnish
  • Chopped parsley for garnish

Instructions
 

  • Bring a large pot of water to a boil, using about 4–6 quarts per pound of pasta. Season generously with 1–2 tablespoons of salt. Once the water reaches a rolling boil, add the pasta and cook until al dente, following the package instructions. Stir occasionally to prevent sticking. Just before draining, reserve 1 cup of pasta water. Drain the pasta and set it aside without rinsing.
  • While the pasta cooks, heat a large skillet over medium-high heat. Add the bacon and onions and sauté until the onions are soft and the bacon is nearly crisp. Stir in the tomato paste and garlic, cooking until the paste is fully incorporated and fragrant.
  • Reduce the heat slightly and pour in the cream along with the reserved pasta water. Stir well to combine, then add the calabrese peppers and parmesan cheese. Let the sauce simmer gently until slightly thickened, adjusting the heat as needed.
  • Add the drained pasta to the skillet and toss until fully coated in the sauce. Serve warm, garnished with extra Parmesan and chopped parsley, if desired.

Notes

Notes: Reduce the amount of calabrese chiles if you prefer a less spicy dish.
