This Green Chile Chicken Cornbread Skillet is the definition of comfort food made easy. A creamy, cheesy chicken filling with sweet corn, smoky adobo, and mild green chiles is topped with a fluffy homemade cornbread and baked until perfectly golden. Every bite has the perfect balance of creamy, savory, and just a little kick.

why you’ll love this green chile chicken cornbread skillet
I know it’s only August, and I’m definitely not ready to fully embrace pumpkin season just yet… but the second I tested this recipe, I knew it couldn’t wait until fall. It has all the cozy comfort of a casserole, but it’s still light enough that it doesn’t feel too heavy for these late summer evenings. Sometimes a recipe is just too good to sit on, and this was one of them.
If you ask me, anything topped with warm, buttery cornbread is an automatic win. There’s something so satisfying about scooping through that fluffy, golden topping into a creamy, cheesy chicken filling underneath. Every bite is packed with tender chicken, sweet corn, smoky adobo, mild green chiles, and just enough spice to keep things interesting.
What I love most about this Green Chile Chicken Cornbread Skillet is how easy it is. Everything comes together in one skillet, which means less cleanup and more flavor since every layer builds right in the same pan. It’s the kind of dinner that feels like comfort food without requiring hours in the kitchen, making it perfect for busy weeknights or those first evenings when the weather starts to cool off.
And don’t be surprised if everyone goes back for seconds. I have a feeling this is going to be one of those recipes that gets requested over and over again.
ingredients you’ll need green chile chicken cornbread skillet
for the chicken filling
- olive oil or avocado – Used to sear the chicken and sauté the vegetables while building flavor from the very beginning.
- chicken breasts – Lean, tender, and perfect for shredding into the creamy filling. Rotisserie chicken also works as a shortcut.
- taco seasoning – Adds smoky, savory flavor without measuring a dozen spices.
- yellow onion – Adds sweetness and depth as it softens in the skillet.
- garlic – Fresh garlic gives the filling rich, homemade flavor.
- chicken broth – Creates the base for the creamy sauce while keeping the chicken juicy. For a protein boost, use bone broth.
- diced green chiles – Add mild heat and classic enchilada flavor without making the dish overly spicy. You can find these in a 4oz can in the international section of your grocery store.
- adobo sauce – Adds smoky heat and a little extra depth to the filling. A little goes a long way. You can find this is a small can in the international aisle of your grocery store.
- green onions – Add freshness and a mild onion flavor throughout the filling. Be sure to first trim the roots, then slice and use both the green and white part!
- cream cheese – Melts into the broth to create an ultra-creamy, cheesy sauce.
- corn, frozen or canned – Adds sweetness, texture, and little pops of flavor in every bite.
for the cornbread topping
- cornmeal – Gives the cornbread its classic flavor and hearty texture.
- all-purpose flour – Keeps the cornbread light and tender. Want to make this gluten-free? Use a 1:1 ratio gluten-free flour like Bobs Red Mill
- baking powder – Helps the cornbread rise while baking.
- salt – Balances and enhances the flavors.
- buttermilk – Creates a moist, tender cornbread. If you don’t have buttermilk, simply add 1 tablespoon of vinegar or lemon juice to regular milk and let it sit for 5 minutes.
- egg – Helps bind the batter and gives the cornbread structure.
- melted butter – Adds richness and buttery flavor.
- diced green chiles – Add moisture and another layer of flavor. You can find these in a 4oz can in the international section of your grocery store.
- green onions – Brighten the cornbread and complement the filling.
- shredded cheese – Pepper Jack adds a little heat while cheddar keeps it classic.
- jalapeño – Optional, but beautiful on top and adds just a little kick.

step-by-step
- season and cook the chicken. Coat the chicken with oil and taco seasoning. Sear in an oven-safe skillet over medium-high heat for 3–4 minutes per side. Add the onion and garlic, then sauté for another minute.
- finish cooking the chicken. Pour in the broth, green chiles, and adobo sauce. Cover and simmer until the chicken reaches 165°F. Remove and shred.
- prepare the cornbread batter. Whisk together the dry ingredients, then stir in the buttermilk, egg, butter, green chiles, green onions, and cheese until just combined.
- make the filling. Stir the cream cheese into the skillet until melted. Add the corn, shredded chicken, lime juice, and green onions, then mix until creamy.
- assemble. Spread the cornbread batter evenly over the chicken mixture. Top with sliced jalapeños and extra cheese, if desired.
- bake. Bake for 30 minutes, or until the cornbread is golden brown and cooked through. Let cool for 5–10 minutes before serving.
pro tips
- Use an oven-safe skillet. It makes this a true one-pan meal with almost no cleanup.
- Don’t overmix the cornbread batter. Stir just until everything is combined to keep it light and fluffy.
- Shred the chicken while warm. It pulls apart much more easily than when it’s cooled. I like to use two forks, but adding it to a mixer on medium speed is a fool-proof option!
- Check the cornbread with a toothpick. If it comes out clean, it’s ready.
- Let it rest before serving. Five to ten minutes allows the filling to set up slightly.
variations
- Swap chicken breasts for rotisserie chicken to save time.
- Use ground chicken or ground turkey instead.
- Add black beans for extra protein and fiber.
- Stir in diced bell peppers or zucchini for more vegetables.
- Top with crushed tortilla chips for a little crunch.
- Make it spicier with diced chipotle peppers or extra jalapeños.

This was very tasty !!
I did a batch and 1/2
Almost had too much cornbread-but is that really a problem 🤣
Only thing I changed was to add a can of white beans
Sandra, I am so happy to hear this was a hit! No such thing as too much cornbread, but if you prefer less, try cutting the cornbread recipe in half! Love adding white beans for fiber. Thanks for sharing!
