Ingredients
  

  • 1 tablespoon oil neutral
  • 6 corn tortillas
  • 1 pound ground beef
  • 4 jalapeños 2 sliced, 2 chopped
  • ¼ cup sweet onion chopped
  • 4 ounces cream cheese softened
  • 1 cup cheddar cheese shredded
  • 8 pieces bacon cooked
  • Chives chopped, for garnish

Instructions
 

  • Heat a skillet over medium heat and add a drizzle of oil. Add the diced onion and chopped jalapeños and sauté until softened and fragrant. Transfer the mixture to a bowl, add the cream cheese, and stir until well combined. Set aside.
  • Divide the ground beef into six equal portions. Press each portion onto one side of a tortilla, spreading it all the way to the edges to form an even layer. Season the beef side with salt.
  • Wipe out the skillet and add a little more oil. Arrange five jalapeño slices directly in the pan for each taco, then carefully place a prepared tortilla, beef side down, over the jalapeños. Press down gently to smash the beef into the pan. Cook for about 2 minutes, or until the beef is browned and crisp. Flip the taco, sprinkle with shredded cheese, and cook for another 2 minutes until the cheese is melted and the tortilla is golden.
  • Remove from the skillet and spread a spoonful of the jalapeño cream cheese mixture over the top. Finish with a sprinkle of crispy bacon bits and chopped chives.
    Serve immediately and enjoy!
