As the taco cooks, the beef crisps up while sticking to the tortilla, creating those irresistible caramelized edges and tons of flavor in every bite. The tortilla gets slightly crispy on the outside but stays tender inside, making the texture completely different from a regular taco. It’s faster, less messy, and feels like a fun twist on classic tacos with way more flavor payoff.


step-by-step
- Heat a large skillet to medium-high heat. Add a drizzle of oil, chopped onions and 2 chopped jalapenos. Cook until softened, then transfer to a bowl along with the cream cheese. Mix well & set aside.
- Divide the ground beef into 6 equal portions. Press the ground beef evenly onto the corn tortilla, spreading it all the way to the edges—season with salt & pepper.
- In the skillet, place 5 jalapeños in a circle in the skillet for each taco—so two tacos at once means 5 jalapeños per taco. Heat skillet, then carefully place a prepared tortilla, beef side down, on top of the jalapenos. Press down until beef is browned, roughly 2-3 minutes.
- Flip the taco and top with cheese cooking for another 1-2 minutes, or until cheese has slightly melted.
- Remove tacos from the pan and spread the cream cheese mixture over the tacos, top with bacon and chives.

- 1 tablespoon oil neutral
- 6 corn tortillas
- 1 pound ground beef
- 4 jalapeños 2 sliced, 2 chopped
- ¼ cup sweet onion chopped
- 4 ounces cream cheese softened
- 1 cup cheddar cheese shredded
- 8 pieces bacon cooked
- Chives chopped, for garnish
Instructions
- Heat a skillet over medium heat and add a drizzle of oil. Add the diced onion and chopped jalapeños and sauté until softened and fragrant. Transfer the mixture to a bowl, add the cream cheese, and stir until well combined. Set aside.
- Divide the ground beef into six equal portions. Press each portion onto one side of a tortilla, spreading it all the way to the edges to form an even layer. Season the beef side with salt.
- Wipe out the skillet and add a little more oil. Arrange five jalapeño slices directly in the pan for each taco, then carefully place a prepared tortilla, beef side down, over the jalapeños. Press down gently to smash the beef into the pan. Cook for about 2 minutes, or until the beef is browned and crisp. Flip the taco, sprinkle with shredded cheese, and cook for another 2 minutes until the cheese is melted and the tortilla is golden.
- Remove from the skillet and spread a spoonful of the jalapeño cream cheese mixture over the top. Finish with a sprinkle of crispy bacon bits and chopped chives.Serve immediately and enjoy!
